BAKED EGGS WITH AVOCADO AND FETA

Baked Eggs

INGREDIENTS (2 Portion)

  • 4 eggs

  • 1 avocado

  • olive oil or non-stick spray for gratin dishes

  • any toppings you like, tuna, salmon, ham or bacon

  • red onions cut to your liking

  • 2 tsp crumbled Feta Cheese

  • salt and fresh-ground black pepper and any spices/herbs you like

INSTRUCTIONS

  1. Peel the avocado and cut each half into 6 slices and place it in the bottom of 2 gratin dishes.

  2. Add any toppings cut in small cubes and add the cut red onions as well. you likeBreak eggs into individual ramekins and let the eggs and avocado come to room temperature for 15 minutes.

  3. Set the BBQ up for indirect cooking oven to 200C.

  4. Break the eggs and very carefully tip two eggs into each dish.

  5. Sprinkle with crumbled Feta and season to taste with salt and fresh-ground black pepper. (Remember that Feta is salty; we didn’t use much salt.)

  6. Bake 12-15 minutes or less, until the whites are set and the egg yolks are done to your liking.

  7. Serve hot
