SWISS CHEESE FONDUE
INGREDIENTS

1 Clove Garlic

150ml dry white wine

1 teaspoon lemon juice
-
275g Emmental cheese, grated
-
275g Gruyere cheese, grated

1 tablespoon cornflour
-
3 tablespoons Kirsch liqueur (snaps)

Pinch white pepper
-
Pinch ground nutmeg
-
Pinch paprika

Cheese Tip
Always shred your own cheeses from a block. Pre-shredded cheeses have additives that can keep them from melting properly
DIRECTIONS

Rub the inside of a fondue pan with the cut clove of garlic. Pour the wine and lemon juice into the pan and heat gently. Gradually add the cheeses, stirring continuously until melted.

When the fondue begins to bubble, blend the cornflour with the Kirsch and stir in. Cook gently for 2-3 minutes then add the rest of the seasonings.

Swap out half of the cheeses for cheddar to create a milder flavor

Brie is another great creamy addition to fondue

Traditionally you have to drink a shot of Kirsch Liqueur every time you loose a bread cube from your fork
Serving Suggestion:

Cubes of French bread are traditionally served with this fondue, although a selection of fresh salad vegetables, such as spring onions, capsicums, radishes, chicory and celery, add a contrast of textures.
